Ajornada Prata e Amburana is grown and produced on a small family farm in the lush countryside of Minas Gerais. All expressions of Ajornada are made with fresh sugarcane pressed within hours of harvest. It contains no additives or sugar of any kind and is simply one of the finest Cachaças in the world.

Rabo De Galo

Ingredients

Serving: 1 1 3/4 oz. Ajornada Carvalho 3/4 oz. sweet vermouth 1/4 oz. Cynar Garnish: lime twist

Steps

Pour the cachaça, vermouth and Cynar into a mixing glass with ice and stir until chilled. Strain into a rocks glass with ice. Garnish with a lime twist.

Macunaíma

Ingredients

Serving: 1

  • 1 3/4 oz. Ajornada Carvalho
  • 3/4 oz. lime juice
  • 3/4 oz. simple syrup
  • 1/4 oz. Fernet-Branca

Steps

  1. Pour the cachaça, lime juice, simple syrup and Fernet-Branca into a cocktail shaker.
  2. Shake with ice.
  3. Strain into a chilled lowball glass without ice.

Caipirinha

Ingredients

Serving: 1 2 oz Ajornada Prata, 1 thin-skinned lime, 2 teaspoons unrefined cane sugar

Steps

Slice the lime into quarters cutting out the white, pithy core from each segment. Gently muddle the wedges with the sugar in a rocks glass until sugar begins to dissolve. Add the cachaça and 3 to 4 ice cubes. Pour the contents into a cocktail shaker and shake until chilled, then pour the contents back into the rocks glass, or stir in the rocks glass until frosty

Ingredients

2 oz Ajornada Prata or Carvalho 1/2 oz maraschino liqueur 3/4 oz lime juice, freshly squeezed 1/2 oz grapefruit juice, freshly squeezed Garnish: lime wheel

Steps

Add the rum, maraschino liqueur, lime juice and grapefruit juice into a shaker with ice and shake until well-chilled. Strain into a coupe glass. Garnish with a lime wheel.
